Tetra Pak is hoping to start a movement to encourage families to make small, smart changes to help the environment, such as using sustainable, recyclable cartons in place of cans. If everyone made even one small changes, imagine the difference we could make.
I received a starter kit from Pacific Foods, a brand similarly committed to be environmentally responsible, containing Pacific Foods Organic Pumpkin Puree, Pacific Foods Organic Jellied Cranberry Sauce, and Pacific Foods Organic Chicken Simply Stock. I immediately liked the compact size, making them easier to store and taking up less space than cans (they use 1/3 less packaging, I found out!) and also eliminating the tinny taste cans sometimes leave. My favorite part was how easy it was to reseal the cartons, keeping to food fresh and reducing wasted product.
I'd like to share with you a recipe that means more to me now than ever. My recently-passed grandmother made this version of delicious pumpkin pie. She would have especially loved the idea of helping the earth while keeping food tasty! (This is just the filling. Use whatever crust - premade or from scratch - that you wish!)
Nana's Pumpkin Pie
Ingredients:
14 1/2 oz of pumpkin puree
2 packages of Sweet & Low
1/2 tsp. salt
1 1/2 cup skim milk
1 tsp. ginger
1 tsp. nutmeg
1/2 tsp. cinnamon
1 egg (well-beaten)
Directions:
Mix everything together. Bake at 375 degrees for 1 hour. Enjoy!
